Pecan Bites

Ingredients

250g Pitted Dates 150g Pecans (Chopped or Halves) 100g Raw Cashew Nuts (Chopped or Whole) 100g Walnuts (Chopped or Halves) 1 -2 tbsp of Maple syrup or Agave Nectar 3 tbsp Melted Coconut Oil

Toppings

200g Dark Chocolate (optional vegan) 1 tbsp Melted Coconut Oil Pecans (half or chopped)

Suggested Decoration

Chocolate drizzle Half dipped (triangle or base) Or whatever you wish for you.

  1. Soak the Pitted Dates in some hot water (30mins longer if you wish)

  2. Roughly chopped pecans, cashews & walnuts (can do this in a food processor)

  3. Remove the dates from the water and give them a gentle squeeze to remove some of the excess water. Put in a food processor give them a quick chop.

  4. Add all the other filling ingredients to the food processor, chopped pecans, walnuts & cashews, Maple Syrup or Agave Nectar, and melted coconut oil and pulse the food process until the mix is smooth and combined.

  5. Greaseproof paper a flat baking tray (I used a 9 x 9 Inch (22.86 x 22.86 cm) cake tin)

  6. Remove the mixture flatten into the tray and place them in the fridge to set.

  7. Once set use the greaseproof to help remove the set bites and cut into appx 25 bite size squares.

  8. While they are in the fridge melt your coconut oil & dark chocolate.

  9. Using two spoons dunk the bites into the melted chocolate mix and fully coat them as you wish before returning to the baking tray. (Add the decoration to your bite if you wish.) Set the bites aside for the chocolate to harden these can be placed in the fridge to set.

  10. You can freeze this if you wish to make them last little longer.
