Chocolate, Cranberry & Orange Bites

Filling

  • 170g Pitted Dates

  • 40g Dried Cranberries

  • 1 Orange (Juice & keep Zest for topping)

  • 2 tbsp Melted Coconut Oil

  • 100g Raw Cashew Nuts

  • 100g Walnuts

  • 1 tbsp of Cocoa or Cacao Powder

Topping

  • 200g Dark Chocolate (optional vegan)

  • 1 tbsp Melted Coconut Oil

  • Zest of 1 Orange

Suggested Decoration

  • Chopped Dried Cranberry

  • Chopped Crystallised Orange or Lemon Peel

  • Orange Zest

  • Or whatever you wish for you.

  1. Soak the Cranberries in the Orange Juice (30min longer if you wish). Soak the Pitted Dates in some hot water (30mins longer if you wish)

  2. Roughly chopped cashews & walnuts (can do this in a food processor)

  3. Remove the dates from the water and give them a gentle squeeze to remove some of the excess water and put into a food processor give them a quick chop.

  4. Add all the other filling ingredients to the food processor, dried cranberries, orange juice, chopped walnuts & cashews, cocoa or cacao powder, and melted coconut oil and pulse the food process until the mix is smooth and combined

  5. Greaseproof paper in a flat baking tray

  6. Remove the mixture rolling it to appx 25 bite size balls (Tip put coconut oil your clean hands before you start) and place them on your baking tray

  7. Place them in the fridge to set. While they are in the fridge melt your coconut oil & dark chocolate. Once melted add the Orange Zest.

  8. Using two spoons dunk the bites into the melted chocolate mix and fully coat them before returning to the baking tray. (Add the decoration to your bite if you wish.) Set the bites aside for the chocolate to harden these can be placed in the fridge to set
